Freestyle Tout boasts an impressive dessert temptation

FOR more than a decade, Martin Duncan has been catering to the sweet-tooths of Brisbane with his dessert cafes Freestyle Tout.

While the original cafe at Rosalie, in Brisbane's inner west, is no more after the building was pulled down last year, his second cafe in Fortitude Valley continues to draw an impressive crowd keen for their dose of calorific indulgence.

The cafe is bright and fun with splashes of red contrasting against dark, intense walls; plenty of funky artwork (that's often for sale); and bifolding, aluminium windows that open out on to the Emporium shopping and dining precinct.

Although the desserts remain as mouthwatering as ever, the employment of chef Nicholas Cooper this year means the savoury menu is just as inviting.

No longer is the food just about simple sandwiches and salads as it was with the original cafe. Now the menu is interesting and engaging, with top-quality choices being offered at reasonable prices.

The food is Mod Oz with a strong seafood bent, including swordfish risotto, salt and pepper calamari, and fish of the day. There's also a healthy variety of game available, as in the charcuterie platter for two with venison terrine, duck parfait, smoked lamb, jamon, rabbit rillettes served with house-made pickles.

Trying to save room for dessert, we opted for some lighter savoury choices with the white fish carpaccio and the soba noodle dish.

Though small, the carpaccio entree was beautifully presented and a delicious flavour match, with slivers of raw fish working nicely with slightly bitey pink grapefruit and creamy Japanese dressing.

Alternatively, my soba noodle dish was generous in proportion, with large twists of noodles topped with organic Moreton Bay bug meat and shimeji mushrooms.

The noodles had been coated in a thick and creamy hazelnut butter truffle oil which offered richness and weight, while the bug was sweet, fresh and tender.

Next, it was time for our belly-bulging, thigh-thickening delight.

For traditionalists there's the unbeatable sticky date or bread and butter puddings, plenty of chocolate offerings including flourless chocolate cake and bitter chocolate tart, and Freestyle's sundaes.

My guest couldn't go past one of these treats, choosing the Berry Deluxe version with vanilla ice cream, cherry and strawberry sorbets, blackberries, raspberries, marshmallows and a wedge of dark chocolate.

The silky and luscious vanilla bean ice cream was the best she claimed she'd ever had, while the fruity sorbets were crisp and clean, providing a refreshing burst of flavour against the intense chocolate.

A friend had raved about the white chocolate raspberry brioche dumplings so I decided to try them for myself.

One bite and I could see what all the passion was about. The dumplings arrive as four small crescent moon-shaped doughnuts on the plate sprinkled with sugar. As you break through the surface, warm, thick chocolate sauce pours out on to the plate dotted with bright, pink raspberries. Super-sweet and incredibly rich, they're absolutely delicious.

Accompanied by a slightly tarty raspberry liqueur, vanilla bean ice cream and a small jug of white chocolate dipping sauce good enough to drink, it's an indulgence worth every calorie.

We enjoyed our lunch with a glass of Bird in Hand sparkling and Ninth Island sparkling, chosen from the well-formed wine list offering a solid mix of popular labels from Australia and overseas.

Service throughout our visit was smooth and efficient, though lacking a little warmth, with our waiter seemingly less than enthused.

Other than that, Freestyle is a lovely place to dine, offering a relaxed cafe-style experience now with savoury dishes that rival its desserts.
